Fried Chicken

I made fried chicken and mashed potatoes and gravy for supper last night. They turned out tasting yummy, but I wasn't very happy with the way the coating turned out on the chicken, so I may have to try something else next time.

First I washed and dried the chicken pieces. Then I mixed some seasoned bread crumbs, some flour, salt and pepper until it tasted good. I heated up my electric skillet and put about 6 T. of crisco in it and let it melt.

Next, I dipped the chicken in the milk, then flour, then milk, then flour....yep, twice! Making sure to get them good and coated with the flour mixture.
When my crisco was melted, I put the chicken pieces in to cook.

I am a very messy cook!!

Turn it every little bit so that it gets cooked on all sides and all the way through. I cover it with the lid while cooking. It took about 45 minutes to an hour for the chicken to cook.

Finished and ready to eat! The problem I had with this is that it didn't turn out crunchy like you would think of fried chicken crunchy....hmmm...and I have problems with getting the coating to stay on all the way through cooking. Same for breaded tenderloins and chicken fried steak.... Any tips? Please help me out here....

Boiled some potatoes....

...and mashed them with my good ole hand masher. I like lumpy potatoes. To the potatoes I add 1/2 stick butter, some milk to the thickness of your liking, salt and pepper and sometimes a little sour cream.

Gravy time! After removing the chicken from the skillet, I mixed 3 C. milk and about 1/8 of a C of flour and poured it right into the chicken drippings. Bring to boil. Then I measured 3 more cups of milk and added 1/8 C. flour and poured just a little bit in, bring to boil. Add a little more flour to mixture, pour a little in while whisking, bring to boil. Just keep adding a little more flour each time so when you add the very last time it should thicken up just right. Add salt and pepper at the end to taste.

Just keep stirring, just keep stirring!

Hubby tester gives the ok!
