Family Favorite Casserole

I made this awhile back, but just haven't gotten it up! It's really good and smells like vegetable beef stew while it bakes (because it has vegetable beef soup in it!) and reminds me of fall. Fall cannot get here quick enough! Anyway, I found this recipe in an old cookbook that I have that was published in 1982 and it's one of those recipe books that the people in my husband's small town made for their centennial. I love those old cookbooks. They have such good recipes in them and I know a lot of people with recipes in it. On to the recipe:

Family Favorite Casserole:

5 or 6 potatoes
Onions - sliced (to suit your taste)
1 1/2 lb. hamburger or ground pork
1 can vegetable beef soup (undiluted)
1 can mushroom soup (undiluted)
Crushed potato chips (I used regular Lay's chips)

Layer sliced potatoes, onion and raw hamburger in greased 9 x 13 inch casserole dish. Mix the vegetable soup and the mushroom soup together with a little bit of milk or water (just enough so it will pour). Pour soup over potato mixture. Bake at 350ยบ for 30 minutes. Check for dryness (if it's too dry, add a little more liquid). Cover with crushed chips and bake for 15 minutes longer. Serve.

Keeping Things Yummy!
